This early success led to taking on a full-time cheese maker, Richard Tagg, and in 1995 the creation of a larger cheese dairy, within a lovely old farm building. Now the vast majority of the farm’s milk is turned into cheese, as a rule seven days a week
An aged Lincolnshire Poacher with a full strong mellow flavour. Made to traditional methods from unpasteurised milk from their own 230 pedigree Holstein cows. The cheese has been taste selected and matured on for over 24 months and has great depth and complexity with a lovely smooth lingering finish and a hint of sweetness.
